Brut IPA #2 – Ultra-Ferm – Super Dry Homebrew Beer

Equipment
In this home brewing video, we’re making a Brut IPA for the second time on this channel. The first Brut IPA we made did not ferment all the way down to a 1.000 final gravity so it did not have the signature dry character of a traditional Brut IPA. A Brut IPA is a unique beer style because it pairs elements from the wine world with the beer world. Brut is traditionally a wine term used to describe dry champagne. A Brut IPA is a dry and light IPA that beer lovers and wine lovers can both appreciate. We brewed this dry and fruity IPA with Clawhammer Supply’s 10 gallon 240-volt BIAB system which let us brew this beer with super-fast heat-up times. What we learned from the last beer is that the key parts of a Brut IPA recipe is making it highly fermentable and light. To accomplish this, we had a grain bill that consisted mostly of Pilsner along with a bit of Flaked Rice and Flaked Corn. We crushed these grains super fine for a better efficiency and then fermented everything using two types of yeast. We used California Ale yeast and Ultra-Ferm yeast from White Labs. The Ultra-Ferm yeast was key to fermenting all the sugars out of this beer for a dry flavor. We drank this beer on a nice hot day and we recommend you do the same. A Brut IPA is perfect for summertime and goes great with dessert after a big meal or the main course. We recommend pairing this beer with dark chocolate, stuffed mushrooms, creamy sauces, and seafood. Check out the resources below for a full recipe, brewing equipment, and an article about the Brut IPA style that has an interview with the style’s creator, Kim Sturdavant.
